The festive season is just around the corner. This silky smooth and elegant white gravy chicken is a must try. It is mild in taste , low on spices and big on flavors. 

The ingredients and methods for Chicken Mughlai are as follows:
Ingredients :

Whole Chicken 700-800 grams

(cut into medium chunks)- you may also use boneless chicken thighs
1 Large onion finely chopped
(I have used a combination of white and Red 1:1)
1 tbsp Ginger paste 
1/2 tbsp garlic paste
Whole spices (crushed):
Green Cardamom 2-3, 
Cloves : 1-2
Cinnamon stick: 1 medium
Bay Leaf:  1 
Natural Yogurt 1/2 cup
3-4 blanched almonds to make  a paste (read step 1)
1/2 cup cream
1-2 green chilies finely chopped/dried red chilies
Powdered spices:
1/2 tsp Cumin powder 
1+1/2 tsp Coriander Powder
1/2 tsp Red Chili powder optional
1/2 tsp of white pepper powder
1/2 tsp garam masala powder
White oil for cooking 
1/2 cup hot water
For garnishing:
1 tbsp ghee
handful of golden sultanas.
handful flaked almonds (i used slivered almonds)


Step 1: In a blender tip the blanched almonds and half the yogurt, ginger, garlic paste to make a smooth paste. Now add rest of the yogurt, powdered spices, chilies and marinate the chicken. Set aside for 2-3 hours.

Step 2 : Heat a pan and the whole spices in the hot oil. Once they start to splutter add and fry the chopped onions until golden brown.

Step 3: once the onions are nicely browned add the marinated chicken, and cook until it changes color and the oil separates.

Step 3 : Now add 1/2 cup of water and cover till the chicken is cooked and gravy comes to  a boil. Add Cream, stir, cover and cook for another 10-15 minutes on low flame until you see oil floating on top.

Remove and transfer into  a serving bowl.

Step 4: Now in a separate skillet/frying pan add 1 tbsp of ghee and once the ghee is hot carefully add the sultanas and almonds flakes . Once they change color slightly pour it on top of the chicken and gravy /sauce in the serving bowl.

Your chicken mughlai is ready to be devoured with some Indian breads such as Naan, tandoori roti or a simple Pilaf. Enjoy this beautiful dish with your friends and family this festive season.
