Lamb and Veggie pasties, yet another delicious picnic treat. With the onset of winters these beautifully spiced lamb mince in aromatic spices and in golden pastry crust are prefect warm ups with a cup of coffee.

They make deliciously simple snack at any time for the entire family and a perfect finger food for any occasion..

To make Lamb and Veggie Pasties you will need :

Ready to roll puff pastries (1-2)for 4-8 pasties

veggies to go in the food processor : (remember you can add veggies of your choice and depending on availability)

2 carrots peeled and roughly diced
2 sticks of celery roughly chopped
4-5 button mushrooms optional 
1-2 red chillies
1 large onion roughly diced
1 green/red capsicum roughly diced, chores removed
2-3 garlic cloves
mint and coriander/parseleyleaves just a handful(1:2 ratio)

You will also need:
1/3 teaspoon of cumin seeds for tempering
500 grams of Lamb mince/goat meat mince
1/2 cup each of green peas and sweet corn kernels
1/3 tsp of cumin powder
1/2 tsp of coriander powder
1 tsp of fennel powder
Tomato sauce/ketchup 1 tbsp
1 cup of grated cheddar.
Salt and Pepper to season
1 egg lightly beaten
1-2 tbspn oil for cooking(canola/sunflower/olive)
Sesame seeds to sprinkle on the pastries
Sweet chilli sauce to serve


Put all ingredients into the food processor and mince finely on pulse.

Preheat Oven at 200 degrees and line your baking tray with a greaseproof sheet

Step 1: Heat oil in a frying pan and add tempering of cumin seeds.

Step 2: Add the minced meat and stir fry until the meat starts to brown and add the ground spices like coriander,cumin and fennel.

Step 3: Saute the meat and spices, now add the green peas and sweet corn kernels.

Step 4: next goes in your minced veggies and herb mixture straight from your food processor

Step 5: now add the tomato sauce or ketchup and keep stirring.

Now this is perfect time to take out your puff pastry sheets from the refrigerator and allow to thaw.

Back to the meat mixture, keep sauteing until the moisture evaporates and you are left with deliciously crumbly meat and veggie mixture. Season with salt and pepper and transfer into a bowl.

Step 6: Now add the grated cheddar cheese to the meat and veggie mixture and give everything a good but gentle mix.

Tasty cheddar, minced meat and veggie stuffing is ready ..do a taste test and adjust seasoning if necessary.

Step 7: Now cut your pastry sheets into half and then cut each into half again... so you have 4 portions from a single sheet or 8 from 2 sheets of pastries.

Step 8: lay 2-3 tablespoon of the stuffing along the middle of the sheet leaving enough space along the edges to fold..do not overfill the pastries

Step 9: now fold along edges of the pastries to meet in the middle. Pinch firmly to seal or you may use a fork to press the edges, finally using scissors to trim each pastries at the end as shown in the pictures below.

Step 10: Repeat with the rest of the puff pastry sheets and the minced meat and cheese mixture. If your pasties start to get too soft place a tray/plate in the fridge and refrigerate your prepared meat stuffed pastries as you go. Or else do the whole lot and refrigerate for 10 mins.

Lamb and vegetable pasties can be prepared as above and stored in the refrigerator days in advance.Simply bake them before you are ready to serve.

Step 11:Now brush each of the pasties with egg wash and sprinkle with some sesame seeds.

Step 12 :Turn oven down to 180 degrees and bake for 25 mins or until  golden.

Carefully remove the pasties from oven and allow to cool. Serve with tomato sauce or sweet chilli sauce to simply delight your taste buds.

These golden baked Lamb and Veggie pasties are wickedly iresistible. Just one is probably not enough!
