FROZEN THEME VANILLA CUPCAKES

Todays post is Frozen Themed Vanilla Cupcakes.

These beautiful cupcakes were made
last month to match the theme of my daughters birthday.
Yess! After a lot of hard work I made her, her favourite Frozen Elsa Princess Cake which I intend to share with you soon. To be honest I am pretty impressed with myself . You will know why I say that when you see the cake. To my abilities that is the best cake I have ever made. yay, happy me!!




So to match the theme I thought why not bake some cupcakes.  Because it wasn't planned before hand I did not have matching blue or silver cupcake cases. You may use one if you like. But I think these yellow cupcake cases are not bad either, what do you think? And for the toppers they are so easy to download. I then took cut outs of the toppers and stick each of the cut outs on to the tooth picks. Job done , easy peasy and quite impressive eh !



These lovely cupcakes were made following Nigella Lawson's Vanilla Cupcake recipe. The beauty of her recipe is it's simplicity. Every time I try this recipe I am rewarded with beautiful, soft and melt in the mouth cupcakes. To match the frozen theme I just added 2 dots of blue gel colouring.
Note: In case you are using food colouring be very careful to add very little at a time, and if you need a darker tint you may add more. Use a skewer or a toothpick to add tiny dots of colour to your batter or icing,  remember very little at a time :)

To make 12-15 Vanilla Cupcakes you will need :

125 grams of unsalted butter
1/2 cup /125 grams of sugar
3/4 cups of plain flour
2 eggs
1/2 tsp baking soda
1 tsp baking powder
2 tsp vanilla essence
2 tbsp of milk
Preheat Oven at 200 degrees centigrade or 400 degrees Farenheit

Method:

Mix all of the above ingredients in a food processor or you may even use an electric mixer. Make sure the batter is of dropping consistency. In case it gets too thick add  a little milk. Spoon a dollop of this mixture into your ready cupcake cases and bake in the oven for 15-20 mins or until just golden on top and springy to touch.

For the icing I used Whipped Cream/Chantilly Cream with a tiny dot of blue colouring mixed in it. Simply used a star nozzle to pipe the cream on top of the cakes. You may decorate your cupcakes just as you like.
By the way these pretty little cupcakes were decorated by my two lil ones ..aren't they gorgeous ?
