Sweet Corn and Ricotta Fritters


Did some one say breakfast ? These beautiful golden Sweet Corn and Ricotta Fritters are just waiting to be enjoyed. Any takers? :)  They are awesome for kids lunch boxes, after school snack or breakfast for the whole family.
 

To make these Sweet Corn and Ricotta Fritters you will need :
 
1-1/2 cups of plain flour OR
 
Self raising or cake flour.
 
1 egg
 
1/4 cup tasty cheddar cheese
 
3/4 cup crumbled ricotta cheese
 
3/4 cup of sweet corn kernels ( I used the frozen variety)
 
1 red onion finely chopped
 
OR 3-4 spring onion greens finely chopped
 
Coriander leaves finely chopped, or any herbs you like.
 
salt and pepper to season
 
Olive Oil to fry or any white oil
 
If you like you may add
 
Red or green capsicum, grated carrots or zucchini



METHOD:

Mix all above ingredients in a bowl to make a semi smooth batter.  Some crumbles of the cheese is okay.

Heat a small non stick skillet or a frying pan  and add some olive oil or any other oil using. Add little oil at a time as you will not need too much oil to fry these fritters. Spoon batter into hot skillet and fry both sides until golden. Remove on a paper towel.


 
 





Serve with choice of sauce and salad on the sides. Health and happiness!!


If packing in kid's lunch boxes wrap warm fritters in foil for them to stay nice and soft.
