CRISPY SKIN GRILLED CHICKEN AND EGG SALAD


Who says salads are boring ? And if you think they are, try this deliciously "Crispy Skin Grilled Chicken and Egg Salad". Loaded with flavour, goodness and health in every bite!! I bet, you just can't resist and more so this dish is so easy to put together that you will be addicted to it just as we are, I promise ! :)
When time puts it's pressure on us salads make an excellent meal be it lunch or dinner, without having to spend much time in the kitchen, yay!! In fact, it is one such low carb and high protein salad that can be enjoyed in any season be it summer or winter. And tell you what, my kids are very fond of this salad too. Their preference has moved from their very favourite pasta to this "scrumptious" (as they say it) chicken salad. I think the variety, the tanginess of the dressing and the ease of  eating it independently makes them crave more for this bowl full of health and taste. Good for me , eh!


Truth be told I was not planning this post, I just tossed this salad up for my lunch just as any other day, but then thought why not take a few shots before I dig into it. The idea was  mainly to play a little with my light and lens;) So please excuse the aesthetics and the presentation bit;P and it smelled so good I just couldn't but had to share it. Perhaps I will have to re do the photographs to make it look more appealing.Till then enjoy the deliciousness:)

All you need for 1 serve ( you can easily double or triple the volume of ingredients)

1 egg, boiled / poached (as you prefer)

1 fillet of chicken thighs or breast (skin on)

To marinate chicken :

If using chicken breast, score with a sharp knife, to reduce the cooking time.
1 teaspoon of garlic paste, or 1 fat clove of garlic crushed
lemon juice from 1 wedge
Freshly ground sea salt and pepper

1 medium bowl of garden salad which can have :

cucumbers  cut into thin wedges /cubed or diced
tomatoes cut into thin wedges
onions thinly sliced and soaked in vinegar or plain water
carrots, thinly diced
green and red capsicum thinly sliced.
marinated olives, 8-10
coriander leaves to garnish
Salad greens( such as lettuce, spinach , rocket )
Lemon wedges

drizzle of mayonnaise and tobasco sauce ( or any other sauce of your choice)

Preheat your grilling equipment on high - you may use your Oven/ BBQ grill, Electric grill or any other. If you do not have access to grill you may use normal griddle pan, in that case the skin may not be as crisp, in that case you can remove the skin if you like.

METHOD:

Step 1: Marinate chicken with all the ingredients listed under marination, and set aside for 10-20 mins

Step 2: Meanwhile rinse, chop and dice your salad ingredients.

Step 3: Now grill your chicken in an electric grill/ BBQ until cooked through and the skin turns brown and crisp , should not take more than 4-5 mins on each side. If using chicken breast please do not overcook as the meat tends to dry out. Once done, remove and slice it with a sharp knife securing it with a kitchen tong. If the breast when sliced is still pink inside, put it back on the grill for a couple of minutes more.

Cook your egg, poached or boiled. However  I like the yolk to be slightly under and runny. So make it just as you would like it.

Step 4 :Put all your salad ingredients in a serving bowl, drizzle olive oil, lemon juice, season with freshly ground pepper and sea salt, toss. Place the sliced chicken pieces on the salad along with the poached egg. Drizzle with mayonnaise and tobasco sauce or any hot sauce of your choice.

Shower some cilantro greens and hog on it immediately. This salad is best eaten while warm.


Pack this salad in your lunch box. Make sure to pack the salad ingredients and chicken (include egg, preferably boiled) separately to avoid sogging. Warm your chicken and egg in microwave and drizzle your favourite dressing just before you are ready.

  1. Hi Indrani di...If I have to cook the chicken in microwave how do I do it? I tried using the grill mode but the chicken came out really dry..

    1. Hi Runa, Really sorry for the late reply, I have never grilled chicken in microwave, and will recommend not to,. electric grills come very handy if you can grab one else OTG, or BBQ grill.. hope this helps:)
