RASPBERRY ICECREAM FLOAT

  
Make Kid's parties fun with this lusciously red fruity drink. With the goodness of raspberries and creamy vanilla ice cream these refreshing drinks are a great party pleaser! With no nasty calories from soft drinks the Raspberry Icecream Float is suitable for all ages..
 



So let's discover the secret ingredient.. shall we??


 
 
For 4 serves/glasses of Raspberry Ice-cream Float
 
You will need:
 
1 litre bottle of sparkling mineral water-chilled
1 litre good quality vanilla icecream
11/2 cups of frozen raspberries (defrosted/thawed)
(you may defrost raspberries in microwave for few seconds, or leave them on your kitchen counter to thaw at least 30 mins before)
4-5 teaspoonfulls of caster sugar (approx. 1 tsp per glass)-ok to use normal/icing sugar.
3-4 tbsps. of desiccated coconut
2-3 tablespoons of honey
few drops of red food colouring.
4 kid size tumblers or high ball glasses.
Ice-cream scoop (optional but recommended)
 
METHOD : Stage One
 

Step 1-4:In a bowl take the required amount of desiccated coconut and mix with red food colouring as shown in the picture.
 
Step 5-7: Take each glass, dip them into honey, then into the red coloured desiccated coconut to coat nicely and evenly on the edge of the glass. Repeat with the rest of the glasses. Refrigerate until ready to serve.
 
METHOD: Stage Two
 
Raspberry Sauce/Puree
 
 
Step 1: Put raspberry, sugar and some sparkling water just enough to help blending into a smooth puree.
 
Step 2: Strain the puree or sauce through a sieve into a bowl.
 
Step 3-4: The strained liquid should of a puree or sauce consistency.
 
(At this stage, it is a good idea to take out your icecream tub from the freezer, and leave it on the kitchen counter, to help it soften a bit)
 
Discard any solids/seeds from the berries.
 
 
METHOD: Stage Three
 
Step 1:Pour the approx. 2-3 tbspns of raspberry sauce into each glass
 
 
 
 
Step 2: Pour in sparkling mineral water approx.3/4 th capacity leaving enough room for at- least 2 medium scoops of vanilla ice cream. Gently stir.

 
Now carefully add two scoops of vanilla ice cream, sprinkle any left over red coconut flakes.. and serve chilled. 
 
You may replace vanilla ice-cream with raspberry ice-cream, or use 2 different flavours.. totally upto you..
