Oh yes, yet another true blue bong's comfort food. Dhonepata Bata or a Pesto made from Hot Green Chillies,
Garlic and Coriander leaves with mustard oil. Super, super delicious with some hot steaming rice. Mostly eaten as an appetizer or in the beginning of a meal, but I can finish a full course meal with this.. honestly! Just try it to simply fall in love with it.

My mouth is already watering as I  type this recipe, Oh! and Coriander is such a magical herb. I love it in almost everything, you name it.

Sharing the recipe exactly the way Ma (mom) used to make it.
To make this Hot hot Pesto you will need :
4-5 bunches of coriander leaves (chopped, stems included, roots discarded)
2-3 green chillies (or as much as you like)
1 clove of garlic (medium size)
3-4 tbsp of mustard oil (or just enough to make a smooth paste in the blender)
More chopped green chillies  to garnish
extra mustard oil to drizzle on top.
Salt to season
No water please!
Place all ingredients in a blender and make  a smooth paste. Check seasoning and adjust according to taste. Transfer into a serving bowl. Drizzle some more mustard oil on top and garnish with a few chopped chillies. 
Make this pesto only with mustard oil as it will not taste good with any other. The sharpness of mustard oil adds that added zing, pungency and traditional touch. Please DONOT add any water.
Enjoy with some hot steaming rice.A combo that will leave you licking your fingers.
